For the second consecutive year, the Chef Ronald Garcia showed his great culinary talent to present two new commemorative desserts ahe national month in Guatemala. Below we tell you more details.
As he did in 2021 with his presentation of “La Monja Blanca”, Chef Ronald García created two pastry works to celebrate 201 years of Independence in the country. Both cymbals were designed in Pinch Patisserieinside the Terra Nostra restaurant.

the quetzal
The first dessert honors the quetzal, National symbol from Guatemala. It is a dark chocolate mousse with cobanero chili on a sponge cake made with Ramón flour.
It is filled with strawberry, blackberry and tamarind compote, with a cold Amaranth biscuit base and cocoa beans. Its decoration is chocolate feathers.
The Grinding Stone
The second dessert is grinding stone, a pepitoria mousse filled with corn cake and caramel, with a cold pepitoria cookie base. It is decorated with ground pepitoria and rose petals, in honor of the women who are the cornerstone of the Guatemalan family’s diet.
This pastry work is based on the traditional grinding stonea fundamental basic element that is part of the cultural and culinary identity of Guatemala.
These two commemorative desserts for the national month in Guatemala will be available during September and you can find them inside the pizzeria Terra Nostralocated in Zone 14 of Guatemala City.
